Looking for an easy, festive treat to make for your friends and family this Halloween?
Here is a vegan, gluten-free dessert that is low in fat, while still big on flavor thanks to the tangy pomegranate and just a hint of vanilla. The bright red color makes it a perfect Halloween treat and can be served plain, or topped with whipped cream or any dairy-free topping. This recipe can easily be made in the dorm kitchens, too! Using only a stove top and fridge.
Serves up to 8
2 cups pomegranate juice (I used POM, but you can also juice your very own pomegranates)
1 1/4 cup water
1/2 cup quick-cooking tapioca pearls
1/4 cup granulated sugar
pinch of salt
1/2 tsp vanilla
Pour pomegranate juice and water into heavy saucepan.
Sprinkle with tapioca pearls and let sit for 5 minutes.
Add the sugar, salt and vanilla and stir. Bring slowly to a simmer and cook for approximately 5 minutes, stirring frequently (Check the directions for your tapioca and alter the cook time accordingly. A good way to tell when it’s done is to taste-test occasionally: the pearls should be mostly transparent and soft in
the center).
Spoon pomegranate tapioca into serving dishes, let cool and then refrigerate for two hours or until set before serving.
