Healthy morning parfait recipe

Sometimes it’s not easy to wake up early and walk up to Founders before class. As much as I enjoy having breakfast, I would rather get another 20 minutes of sleep over eating eggs and cereal. To solve my dilemma, I decided to look for easy breakfast meals that I can make quickly. Parfaits have become my go-to meal of choice. The best part about parfaits is that it doesn’t matter what you put inside, they still taste delicious. Here is my parfait recipe that I make every morning to go with my cup of coffee.

  • Greek Yogurt (any flavor of your preference)
  • 1 Tbsp of Flax Seed
  • Granola
  • Fresh berries
  • Honey

Depending on my timing, I’ll either use a bowl or mason jar to hold my parfait. Mason jars are great for an “on the go” meal. I start by filling half of my bowl with greek yogurt. If you are lactose intolerant, Yoplait of Green Valley has yogurt without lactose. Next, put about 1 Tbsp (a spoonful) of flax seed over the yogurt. Flax seed is a great digestive aid. Then put granola on top; use depending on your preference. Put berries on top, like strawberries, raspberries, blueberries, etc. I usually use whatever berry is the cheapest from the store; lately it is raspberries. Drizzle honey on top to give your parfait a little sweetness. Use the amount of honey to your preference.
